MEDITERRANEAN
LAMB BURGERS
Ingredients
Tzaziki
Sauce:
1 medium cucumber
1 clove garlic, minced
1 cup plain yogurt
½ bunch fresh mint, chopped and divided in half
¼ teaspoon cayenne pepper
kosher salt
Burgers:
1 pound ground lamb
1 pound ground beef
2/3 cup crumbled feta cheese
½ red onion, minced
2 sprigs fresh oregano leaves
kosher salt
fresh black pepper
Garnish:
shredded lettuce
8 pita rounds
Procedure:
Make
the sauce:
1. Peel and grate the cucumber. Drain in a colander.
2. In a small bowl, stir together the garlic, yogurt, half of the chopped
mint, cayenne pepper and salt to taste.
3. Cover and refrigerate until ready to serve.
Prepare
the burgers:
1. In a large bowl, knead together all of the ingredients, including the remaining
chopped mint.
2. Shape the meat mixture into 8 patties of equal size, about ¾ inch
thick. Chill at least 15 minutes but preferably chill up to a day before
grilling (flavors meld together best when made the day before).
3. To cook the burgers, preheat grill to very hot, 500ºF. Grill the
burgers over direct heat until cooked medium, 4 to 6 minutes per side.
4. Grill the pita rounds slightly to warm them through and mark them on the grill.
5. Serve hot burgers on grilled pita with shredded lettuce and tzaziki sauce.
